Abstract

The creation of a new rapeseed variety by scientists of Timiryazev Academy is the basis for conducting research on poultry to ensure that the resulting rapeseed is comparable to its predecessors in physical and chemical properties, and most importantly, in the presence of anti-nutrients (glucosinolates, erucic acid, etc.). Physiological experiments were conducted on broiler chickens with chronic duodenal fistula. Intestinal contents were obtained in the postprandial period at time points associated with the complex reflex and neurochemical phases of regulation of the exocrine function of the pancreas (60 and 120 minutes after feeding). It was found that replacing 10% of the feed with rapeseed 120 minutes after the postprandial period reduced trypsin activity in duodenal chyme by 16.2% (p<0.05), as well as trypsin activity in blood serum by 22.7% (p<0.05) and uric acid by 49.7% (p<0.05), which can be explained by a decrease in protein digestibility and metabolism due to the peculiarities of the amino acid composition of the feed protein and an increase in the amount of fat and fiber in the broiler chicken diet. Moreover, alkaline phosphatase activity decreased in parallel with trypsin, although in the control group, an opposite trend was observed, with cellular enzymes increasing in the postprandial period. Therefore, the use of raw rapeseed has limitations for broiler chickens and can be adjusted by using exogenous enzymes or technologically processing the product to increase the availability of nutrients and reduce fiber.
